In Calabria it was used when time still moved at another pace. It was set near the embers early in the morning and stayed there for hours, while inside it legumes, sauces, meat or vegetables from the garden slowly cooked. Terracotta held the heat gently, letting everything cook low and unhurried. That's exactly what gave the dishes that deep flavor many still remember today.
Every Braalla pignata is genuinely handmade, one at a time. The small imperfections in the terracotta tell of the work of hands, the gesture of the artisan, the living material. And that's exactly what makes it different from any industrial product: no two pignate are identical.
