The pignata wasn't made to sit on display. It was made to stay over a slow flame, among the smells of the kitchen and the voices of home.
In Calabria it was used when time still moved at a different pace. It went beside the embers early in the morning and stayed there for hours, while inside it beans, sugo, meat or garden vegetables slowly cooked. Terracotta held the heat gently, letting everything cook low and unhurried. This is exactly what gave dishes that deep flavor many still remember today.
