The olives are harvested in November, at just the right moment of ripeness, and are made up of Tondina (90%) and other local cultivars (10%), which together give the oil its balance and identity. The olives come from groves grown with traditional methods, respecting nature and the rhythms of the land, keeping the bond with their home territory intact.
 

 
The result is a lightly fruity oil, with a harmonious profile where a gentle bitterness and a light peppery finish come through.
