It comes from Spilinga, in the province of Vibo Valentia, the place where this tradition was born and has never stopped being handmade. It's made with selected meats and Calabrian chili, in a proportion passed down from generation to generation and never written down anywhere. It isn't spicy for fashion: it's spicy because it always has been.
