Fresh chilli is seasonal. It arrives in summer, when southern plants have had all the sun they need to develop capsaicin – the compound that makes chilli hot, which in Calabrian chilli reaches levels few other Italian varieties match. That moment lasts a few weeks, then it's over. Dried chilli is the answer to this seasonality: the most direct, oldest and most effective way to bring Calabrian heat to every time of year, every kitchen and every dish.

Drying chilli isn't a modern technique. In Calabria, strings of chillies hung to dry on balconies and house fronts are one of the most recognisable sights of late summer: a way of preserving that needs nothing special, just sun and time. The heat dries the fruit slowly, reducing its water content and concentrating flavour and heat in proportion to the weight lost. A dried chilli weighs much less than a fresh one, but its flavour is more concentrated and lingering, with a dry, fragrant note fresh chilli doesn't have to the same degree.

The chilli used here is hot Calabrian chilli, picked at the right moment and dried so the fruit keeps all its character. It comes in four formats that aren't just the same thing in different packs: they're four different ways of using the same ingredient, with different uses and different effects on the finished dish.

Whole chilli is for long cooking. In a tomato sauce simmering for hours, in a pulse broth, in an infused oil: whole chilli releases its flavour slowly and gradually, without all the heat exploding at once. Add it at the start, let it work, and remove it before serving. How hot the dish ends up depends on how long it cooked and how many you used.

Crushed chilli – broken into coarse pieces with the seeds – gives more immediate heat than whole: more surface in contact with the food means faster release of flavour. Use it in soups, pulses and marinades, anywhere you want noticeable but uneven heat, where finding a piece of chilli in a mouthful is part of the experience.

Flakes are for finishing: sprinkled over the finished dish, on pizza, pasta, fried eggs, grilled fish. They put the heat exactly where you want it, visible as well as tasted. Cooking heat doesn't reach them, which preserves the more volatile aromas that long cooking would lose.

Ground chilli is for evenly distributed heat, with no pieces and no variation from one bite to the next. It goes into doughs, marinades, meat rubs and mixed condiments where it needs to blend completely with the other ingredients. It's the most precise format, letting you control the heat most carefully.

In the kitchen, dried chilli isn't a one-trick tool. It doesn't just make dishes hot: it adds depth, bringing the warm note that in many Calabrian recipes isn't felt as heat on its own but as something that lifts everything else. A ragù with whole chilli in the pot isn't necessarily a spicy ragù: it's a deeper one, with a background warmth that comes across as complexity. A soffritto of oil, garlic and chilli flakes is the base of half of Calabrian cooking.

With pulses, where chilli cooks in and blends with the sweet starchiness of beans or chickpeas, the heat brings balance: without it, many bean dishes would taste flat. With meat, grilled or stewed, it provides the contrast fat calls for. And with a fried egg – simple and immediate, as anyone who has eaten one with chilli knows – it's one of those pairings that needs no explanation, working instinctively and giving a lot for very little.

Having dried chilli in your cupboard means having Calabria at hand all year round, in the format you need, for whatever you're cooking.

How to use it

Whole in long-cooked tomato sauces, pulse broths and infused oils. Crushed in soups, bean dishes and marinades for meat or fish. As flakes to finish pizza, pasta, fried eggs, grilled fish and bruschetta. Ground in doughs, meat rubs, mixed condiments and sauces where the heat needs to be even. To enrich a soffritto of oil and garlic as a base for pasta, ragù and pan-fried vegetables.

Storage

Store in a cool, dry place away from light. Close the container tightly after each use to preserve the aroma. Dried chilli doesn't need refrigerating.
