Green Tomato Scapece, an Artisan Calabrian Preserve

A green tomato isn't a tomato that didn't make it. It's not the one left behind, waiting to turn red to be good. It's a product in its own right, with a distinct character and a flavour ripe tomatoes can't have: lively acidity, a light bitterness and a firm crunch that stands up to cooking, vinegar and time. Taste it once and you'll look for it again.

In Calabria green tomatoes have always been a proper ingredient, not a fallback. They come at the end of summer, when the plants slow down and the fruit that hasn't ripened is picked before the cold spoils it. It's how country cooking wastes nothing – but it's more than thrift: green tomatoes have something worth having.

Scapece (a traditional vinegar preserve) is the ideal technique for them. Wine vinegar goes deep into a fruit that's already tangy, transforming it without masking it. The green tomato doesn't turn sweet or soft: its character intensifies. The acidity becomes layered and more complex, and the crunch holds up in a way other vegetables can't. There's still bite, and with it all the flavour.

Extra virgin olive oil wraps and balances. With acidity from both fruit and vinegar, the oil brings roundness, softening the edge without losing character. Salt draws out the flavours; natural flavourings complete the profile without taking centre stage.

In the jar the colour ranges from pale green to straw yellow. The aroma mixes vinegar with the fresh green note of the tomato and an unexpected citrusy hint. On the palate there's a double acidity: first the clean, sharp vinegar, then the deeper, longer tang of the green tomato. And in between, the crunch – never soggy.

On an antipasto board it brings something no other preserve does: a lively, crunchy tang that cleanses the palate between bites. With cured meats, where fat calls for acidity, it works instantly. With semi-aged cheeses it adds freshness.

With grilled white meat, especially chicken, it's a fresh side that adds character. With grilled oily fish such as sardines or amberjack, the acidity cuts through the richness. With boiled eggs or cold frittata it brings that tangy contrast usually left to lemon, but deeper.

In a sandwich with mortadella or ham, instead of classic pickles, it's less aggressive, fresher and full of personality. On bruschetta with oil and salt it's already a starter.

Hard to explain to someone who's never tried it. One bite and you understand – and understand why it exists.
