Sun-Dried Tomato Rolls, Artisan Mediterranean Flavour

Sun-dried tomatoes exist because, long ago, someone needed summer to last longer. Fresh tomatoes don't wait: they must be picked and eaten, or they're lost. The long, dry southern sun of July and August solves the problem: slice the tomato, salt it, lay it out to dry and let the heat do the rest. What remains is concentrated and intense, with a flavour fresh tomatoes will never have.

A sun-dried tomato is leathery and deep burgundy, at once sweet, tangy and savoury, with a depth you taste immediately. Used as a wrapper for a filling, it becomes more than an ingredient: it becomes a structure that carries its own flavour and blends with what it holds.

The filling combines ingredients that have known each other for centuries. First the anchovy: small, salty, with a deep umami that transforms whatever it touches. You don't taste fish; you taste depth. With sun-dried tomato it works naturally, as both are concentrated and full-flavoured, and neither overpowers the other.

Capers bring acidity and freshness to balance the density of anchovy and tomato – a lively, almost sharp note that opens up the palate. With anchovy and tomato they form a combination known all over the Mediterranean: three elements worth more together than apart.

Garlic works in the background, binding everything together. Black pepper adds a dry, lingering warmth. Mint is the surprise: a fresh, herbal note that cleans the palate so every bite feels like the first. Vinegar rounds it off with a light acidity that lightens an otherwise dense filling.

Extra virgin olive oil wraps and preserves it all. Over time it carries the aromas into the tomato and the tomato into the oil, so that everything melds into one flavour – the flavour of this product.

The rolls need no preparation: open, plate and serve. On an antipasto board they catch the eye with their shape and colour and deliver on the first bite. With crusty bread or bruschetta the filling spills onto the bread; with semi-aged cheeses the contrast between richness and bold savouriness is spot on.

On toasted crostini with a drizzle of raw oil they're a complete starter. In a salad of rocket and cherry tomatoes they add contrast; chopped into cold summer pasta they give depth. The oil in the jar is a dressing in its own right for steamed vegetables, cold meats or simple bruschetta.
